If your looking for a large smoker to do catering, special events, rib fest or to feed an army, then this is the smoker for you.
SMOKER CAPACITY:
The smoker has 4 doors that open and each section has 5 shelves.
There are 20 shelves which are 25" wide by 40" long.
There is approximately 20, 000 sq. inches of cooking surface inside the smoker.
All shelves can be pulled out fully.
SMOKER WOOD BOX:
This smoker is run on wood. The smoker's fire box is 43.5" x 33" by 25.5" high.
The top of the fire box is a flat cook surface which can hold an extremely large pot (or several smaller pots) or skillets.
The top is reinforced so it won't buckle.
COOKING CAPACITY:
It can hold over 600 half chickens
Well over 1, 000 half pound steaks at once
Over 3, 000 lbs of pork shoulder.
With rib racks you can easily fit in 750 racks of ribs.
You can smoke 12 pigs at once if you have small pigs (under 100 pounds).
ADDITIONAL SMOKER FEATURES:
The smoker is custom made from 1/4 plate steel.
There is a 14.5' serving shelf in the front of the smoker.
To transport wood to an event, you can remove a shelf to store the wood in the bottom of the smoker.
There is a 2" drain valve in the bottom of the smoker which can be used to empty the smoker for easy cleaning or removal of a water bath.
The smoker was designed so that the smoke stakes can be manually heater to speed up the draw of smoke through the chimney. To heat up the smoke stacks, there are two removable steel plates at the base of the smoke stakes. Once removed a propane weed torch can be inserted to heat up the smoke stacks to initiate the draw of smoke through the smoker.
The smoker has chimney extensions to allow the chimney to draw the smoke and heat out of the cooking chamber.

TRAILER:
The smoker trailer has 2 wheels, brakes & lights, and is well balanced.
The ball hitch is 2 5/16.
Total smoker length is 19.5' long.
